My dear Jason made this for dinner...

Chicken Ribbons Satay..

1/2 cup creamy peanut butter
1/2 cup water
1/4 cup soy sauce
4 cloves garlic,sliced
3 tablespoons lemon juice
2 tablespoons packed brown sugar
3/4 teaspoon ground ginger
1/2 teaspoon crushed red pepper flackes
4 skinless boneless chicken breast halves

Combine peanut butter, water, soy sauce, garlic, lemon juice, brown sugar, ginger and pepper flakes in a small sauce pan.
Cook over medium heat 1 minute or until smooth; cool. Remove garlic from sauce and discard.
Reserve 1/2 sauce for dipping.
Cut chicken lengthwise into 1 inch-wide strips. Thread onto 8 metal or bamboo skewers(soak bamboo in water 20 min. to prevent burning)
Lightly oil hot grid to preven sticking. Grill chicken on covered grill, 6-8 min until chicken is no longer pink in center, turning once. Baste sauce once or twice during cooking.

This was very YUMMY!!!!!
